Birdbath: New York's Organic Bakery

We had more than our share of good meals in New York, but my favorite might actually be the breakfast we bought and ate on the street from Birdbath in the East Village. We read about owner Maury Rubin's organic bakeries before arriving in New York, but our expectations were exceeded when we dug into the bag full of pretzel croissants, muffins and peanut-butter cookies, and washed it all down with some organic iced coffee.

All of the baked goods are made with organic ingredients, and the small, standing-room-only storefront has been retrofitted with some neat recycled materials. For example, the counter is placed on top of a hefty stack of recycled blue jeans, the walls are made from wheat and sunflower seeds, the paint is made from milk, and the floor is made of a cork byproduct.
