Quote of the Day: The Environmental Cost of Meat Production

And factory farming is 'optimal' only as long as degrading waterways is free. If dumping this stuff becomes costly — even if it simply carries a non-zero price tag — the entire structure of food production will change dramatically.”
- Gidon Eshel, a former cattle rancher and current geophysicist at the Bard Center, quoted in a January New York Times article. The article, "Rethinking the Meat Guzzler," is an excellent overview of the harm to the environment done by factory farm meat production.
